A spicy, light dinner perfect for these hot summer days. The jalapeño pepper gives a kick that goes so well with the cauliflower rice. And all for so few calories! Hope for leftovers as the Spicy Tuna Bowl makes a great lunch for the next day. Thanks to my friend Eric Oser for the recipe.

Spicy Tuna Bowl

 

Serves 4

 

Thanks to my friend Eric Oser for sharing this recipe with me!

 

Spicy Tuna

1 1/2 cups water

1 can of tuna (7oz)

1/2 cup diced red bell pepper

1/4 cup diced jalapeno pepper

1/4 cup sliced green onions

1/3 cup rice vinegar

2 tablespoons soy sauce

1/2 teaspoon sesame oil

2 teaspoons Sriracha, more or less according to your taste

Juice of 1/2 lemon

 

  1. Mix all ingredients in one large bowl.

  2. Set aside to marinate while preparing Cauliflower Fried Rice.

 

Cauliflower Fried Rice

1 tablespoon olive oil

1/2 cup onion. diced

1/2 cup carrot, diced

1 clove garlic

3 cups riced cauliflower frozen or homemade

1/2 cups fresh or frozen peas

2 tablespoons soy sauce

1 large egg, beaten

 

  1. Add olive oil to pan and sauté onions and carrots, until onions are translucent and carrots are soft.

  2. Add riced cauliflower, peas, and soy sauce. Cook about 5 minutes or until cauliflower mixture starts to brown.

  3. Add egg and mix with cauliflower mixture. Then add the spicy tuna mixture. Liquid will be absorbed by the cauliflower.

Add other veggies: Add match stick cut carrots, thinly sliced cucumber, peeled if not organic, zucchini zoodles, snow peas
