On-The-Go Granola Breakfast Bars

Granola bars are perfect for packed breakfasts and snacks on the go. Customize this basic recipe with any of your favorite fruit and nuts or try one of our tasty combos. Saving time, we like to make several varieties of bars in one day and freeze. Grab a few on our way to work or school and keep some with you for a snack. Also great for those who are busy at home.

 

Inflation is hitting so many areas affecting the cost of living. This is a delicious recipe that is healthily within budgets.  Make a few for great gift sduring the holidays.

On-The-Go Granola Breakfast Bars

Yield 5 bars

 

1 1/4 cup chopped dates

3 tablespoons maple syrup

1 cup pecans

1/4 cup rolled oats

1 tablespoon chopped dark chocolate

1/2 teaspoon vanilla

1/4 teaspoon kosher salt

For coating

1 1/2 tablespoons oat bran

 

Base Recipe

 

1 cup dried fruit, any variety. See fun combos below.

3 tablespoons maple syrup

1 cup nuts, any variety

¼ cup rolled oats

For coating

1 ½ tablespoons oat bran

 

 

1. Put dried fruit and sweetener in food processor and blend until it becomes a paste.

2. Add the nuts and oats. Pulse until combined. The bars should have some texture.

3. Line your workspace with plastic wrap and sprinkle oat bran on top.

4. Scoop 3 tablespoons of mixture, form into a ball with your hands and press together until the ingredients adhere to each other. Place on top of oat bran.

5. Shape into rectangles, then flip the bars over so they are coated in the oats to prevent sticking. You may also use almond meal, cashew flour or grated coconut.

6. Individually wrap the bars and keep in the cabinet, refrigerator or freezer.

 

Fun Combos: 

Add any of these fun combos in place of the dried fruit and nuts, followed with the rest of the ingredients in the above recipe.

  • 1 cup dried cranberries/1 cup almonds/1 tablespoon chopped dark chocolate/¼ teaspoon cinnamon/1/4 teaspoon kosher salt

  • 1 cup dried cherries/1 tablespoon chopped dark chocolate/1 cup hazelnuts /1 teaspoon orange zest

  • 1 cup pitted dates/1 cup pecans/1/2 teaspoon vanilla/ ¼ teaspoon kosher salt

  • 1 cup dried apple/1 cup walnuts/ ¼ teaspoon cinnamon

  • 1 cup dates/3 tablespoons peanut butter/1/2 cup sesame seeds

 

Expand the table suggestions

Recipe is already vegan, dairy and soy free and kosher.

Raw:  Substitute almond meal, cashew flour or grated coconut for the rolled oats and oat bran. Substitute raw honey for maple syrup.

Gluten Free: Use gluten free oats and oat bran, such as Bob’s Red Mill.

Diabetic:  Substitute sugar free maple syrup.

Nut free: Use sesame, sunflower or chia seeds in place of nuts
