The traditional stuffed peppers are yummy but often a large portion.  Mini peppers are a perfect solution for a side, a novel start for a meal and great for portion control. Children will love the cute mini’s!

 

We've taken some multi-colored mini’s, stuffed them with a favorite filling and baked them. The bottoms are small and not as flat as the larger peppers.  After trying to keep the peppers upright and failing, we put them into small muffin tins. The small rims kept the small vegetables upright and worked perfectly!

Garnish with a bit of fresh parsley and enjoy!
