Serves 2

 

2 large beets, washed, peeled and trimmed

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon fresh chopped herbs such as thyme and rosemary

 

1. Preheat oven to 400.

2. Slice beets. With a heart shaped cookie cutter, cut into hearts.

3. Mix olive oil, salt and pepper and herbs. Place in zip lock bag and add beets. Gently toss beets with oil mixture.

4. Place beets on parchment paper lined sheet pan(s) and bake for 20-30 minutes, checking every 5 minutes after 20 minutes. After your remove from the oven, drizzle maple syrup each heart to bring out the beets' natural sweetness.

5. Serve as a side with grilled steak, chicken or fish.
