Cut the carbs and sugar with delicious results!
It’s hard to cut the carbs and sugar, whether you want to lose weight, eat healthier or combat diabetes. A friend of mine just told me she began using insulin and adhering to a diabetic diet. She was down in the dumps. “What am I going to eat!” she cried. “Nothing will taste good.”
My husband felt the same way a few years ago when diagnosed with diabetes. With some work and a change in mindset, we have found favorite recipes can be made with substitutions and new ones created. Expand the table and bring these great low carb recipes on!

1. We will continue with two blogs, our regular weekly food blog, now called expand the table, focusing on ways to bring more folks around the table, and with the Foodie Lit review.
2. Chef Lisa is now working with a professional food photographer (lucky photographer!) and will not be taking an active role in the blog. Fortunately, she will be remaining as Chef Advisor, a wonderful resource for all aspects of food preparation. I am grateful to build on what we started together.
3. The opening page has changed. It adds links to our most recent blogs and a place for your comments at the bottom—and we’d love to hear from you! The website will be tweaked for improvements as the weeks progress.
