Meat loaf tacos—Crumble the meat with some salsa. In a big bowl, toss together chopped romaine, corn, black beans, tomato and jalapeño and other favorite vegetable or toppings. Roll into tortillas.

Mini Tacos: Mix meat, corn, beans and tomatoes. Top with a lime slice. Add cheese, if desired.

Stuffed peppers: Make rice according to directions. Mix meat with sautéed spinach, mushrooms, onions and rice, and stuff bell (color of choice) peppers that have had their tops cut off. Bake in 350 oven for 30 minutes or until peppers are soft. Acorn or butternut squash can be scooped out and stuffed as a great alternate for bell peppers. Select other favorite vegetables for the stuffing as desried.

Pasta and meat sauce: Add the meat to your favorite marinara sauce. Make your choice of pasta and ladle the sauce on top.

Shepherd’s Pie: Mix sautéed onions and cooked vegetables such as chopped peas and carrots with the sautéed meat. Place in ramekins or a casserole dish and top with mashed potatoes. Bake at 350 until hot. Or check out our Shepherd Pie Light.

Vegetable Soup: Add the meat to your homemade or canned vegetable soup and have a wonderful lunch or light dinner.
