Caramelized Onions and Spinach Flatbread with Roasted Tomatoes

This is a favorite appetizer with a great combination of textures and flavors. It can be enjoyed on flat bread, crostini, phyllo cups or crackers. A fun way to involve your guests is to put the tomatoes, onions and dip in bowls and allow guests to make their own.

 

You can also assemble before your company arrives and put on a platter. You may make all of the toppings up to two days ahead of time and store in the refrigerator.

Caramelized Onions and Spinach Flatbread with Roasted Tomatoes

Serves 6

Caramelized Onions

2 tablespoons olive oil

4 large onions, thinly sliced

Salt and pepper

Spinach Dip

1-16 ounce bag frozen spinach, defrosted 

1 package dried onion soup or dip mix

1 cup sour cream

½ mayonnaise

¼ cup Parmesan cheese

Salt and pepper to taste

Roasted Tomatoes

1 pound cherry tomatoes, red or yellow or a mix

2-3 tablespoons olive oil

3 sprigs of fresh thyme

Salt and pepper to taste

Flatbread or crackers

 

1. Heat a large pot on medium high heat. Add oil and onions. It always looks like a lot but the onions will cook down to a fraction of the size.

2. Stir every minute or so in the beginning to break down the onions to half the size.

3. Reduce heat to medium and stir every couple minutes until onions are golden.

4. Reduce heat to medium low and let them caramelize for 15 minutes longer or until very soft and sweet. 

5. Season with salt and pepper to taste. Set aside.

 

Dip

1. Squeeze all water from the spinach and put into a bowl.

2. Add all other ingredients and mix well.

3. Put in the refrigerator for a few hours to thicken.

 

Roasted Tomatoes

1. Preheat oven to 350 and line a sheet tray with parchment paper.

2. Toss everything together on the sheet tray.

3. Roast for 25-30 minutes.

 

Assembly

Spread spinach dip on top of the bread, followed by the caramelized onions and then the roasted tomatoes.

 

Expandthetable suggestions

Vegan: Substitute vegan sour cream, mayonnaise and parmesan cheese in spinach dip.

Gluten Free: Use gluten free crackers or bread.

Dairy Free: Substitute dairy free sour cream and parmesan cheese in spinach dip.

Allium Free: Substitute fennel for onion in caramelized onions. Omit soup mix and decrease half the amount of sour cream and mayonnaise in the dip.
